Thinking of what to cook for dinner today? So little time to spare but want to have delicious dish? Here is my suggestion.
Menu: Dry Prawn Curry
Serve: 4-6 person
Ingredients
250 g large prawns
2 Tbsp fish curry powder
40 ml water
1 Tbsp oil
2 shallots, peeled thinly sliced
2 cloves garlic peeled, thinly sliced
3-5 cm ginger peeled and julienned
1 tsp mixed spices, rinsed and drained
sprig of curry leaf
1/2 tsp salt
1 tsp sugar
1 walnut-sized piece tamarind (mixed with 120 ml water and strained)
How to cook:
- Trim the eyes and whiskers of prawns. Leave the shell intact
- Mix curry powder with 40 ml of water into a smooth paste
- Heat oil in pan over medium heat. When hot, fry shallots, garlic and ginger until brown
- Add mixed spices and curry leaves. Fry for 1 mins
- Add curry powder paste, fry until fragrant. Add salt & sugar
- Add prawns
- Add assam water and continue cooking till prawns are cooked and gravy is dry.
